
Mom says this about this recipe, “Kefta was one of my favorites when we visited Morocco. The North African people are such amazing cooks and really know how to use spices! Enjoy!”

We used ground beef, but this would also be delicious with ground lamb. Mix 1lb of your meat with 1/4 cup finely chopped parsley, 1/4 cup finely chopped yellow onion, 1 tsp dried mint, 1 tsp cumin, 1 1/2 tsp paprika, 1 tsp salt, 1/2 tsp pepper, 1 tbsp harissa, 1/4 tsp turmeric and 1/2 tsp ground ginger.

Soak skewers in water for 30 minutes before forming your meat around them. This will prevent them from burning on the grill.

Preheat your grill pan to medium high heat and oil so that the skewers don’t stick. Cook for 3-4 minutes on each side until browned, but still juicy on the inside.
Use the Kefta for your protein serving and add your veggies (14oz for dinner)! Recipe to follow.
kefta (north african skewers)
- 1 pound ground beef or ground lamb
- 1/4 cup parsley, finely chopped
- 1/4 cup yellow onion, finely chopped
- 1 tsp dried mint
- 1 tsp cumin
- 1 1/2 tsp paprika
- 1 tsp salt
- 1/2 tsp pepper
- 1 tbsp harissa
- 1/4 tsp turmeric
- 1/2 tsp ground ginger
- Vegetable oil
Mix the ground beef with parsley, onion, dried mint, cumin, paprika, salt, pepper, harissa, turmeric, and ginger. Combine well.
Shape the meat onto skewers. Note: Soak wooden skewers for 30 minutes before using so they don’t burn.
Preheat a grill (grill pan) over medium high heat. Grease the grill well with oil to prevent kefta from sticking.
When the grill is hot, add the skewers. Grill on one side for 3-4 minutes until brown. Flip skewers and repeat. Cook until evenly browned but still juicy and cooked on the inside.
