Beans are the protein in this delicious Italian inspired soup! Packed full of veggies, with a salad on the side it makes a complete BLE dinner!

Start by sautéing 1/2 and onion and 4 cloves of minced garlic in 2 tbsp of olive oil for 5 minutes.

Add 1 large carrot and 1 stalk of celery to the pan with 1 tsp each oregano and basil and salt and pepper to taste. Cook this over low heat for 10 minutes.

Next add 1 small diced zucchini, 1 diced red pepper, 2 cans of diced tomatoes and 4 cups of vegetable broth. Cover your Dutch oven and let simmer for 15 minutes.

Finally add 1 can of kidney beans and 1 can of cannellini beans and let simmer for 5 more minutes.

This makes 6 servings. One serving will be your full protein and 8oz of vegetables. With a 6oz salad you will have a complete BLE women’s weight loss portion dinner. Recipe to follow.

  • 2 tbsp olive oil
  • 1/2 cup chopped onion
  • 4 cloves garlic, minced
  • 1 stalk celery chopped
  • 1 large carrot, diced
  • 1 small zucchini, diced
  • 1 tsp oregano
  • 1 tsp basil
  • Salt and pepper
  • 1 red pepper, diced
  • 4 cups vegetable broth
  • 2 cans diced tomatoes
  • 1 can kidney beans
  • 1 can cannellini beans

Heat oil in a Dutch oven. Add onion and sauté for 5 minutes. Add garlic and sauté for 1 minute.

Add celery, carrot, oregano, basil, salt and pepper.Cook over low heat for 10 minutes.

Add red pepper, zucchini, broth, and tomatoes. Cover and simmer 15 minutes.

Add beans and simmer 5 minutes.

6 servings

1 serving=full protein + 8oz veggies
