my mom’s meatloaf

This recipe is an adaptation of the “Not Your Mom’s Meatloaf” from the BLE cookbook. But it IS my mom’s meatloaf…hahaha!

Start with 2lbs (32oz) of ground beef. Add in 1 egg and 4oz marinara sauce.

Measure 6oz cooked cauliflower rice and add to ground beef mixture.

Next you are going to add in your spices (dried onion, garlic powder, Italian seasoning, salt and pepper) and mix thoroughly.

Divide the mixture in half and make 2 loaves on a parchment covered baking sheet. Bake for 40 minutes at 350 degrees.

Remove from the oven and add 4oz of marinara (split between the 2 loaves) and 1/4 cup Parmesan cheese (also split). Return to the oven and bake for 5 more minutes.

A 5oz serving will be your full protein and 1oz vegetables. Add another 13oz (pictures 5oz asparagus and an 8oz salad) and you will have a complete BLE Women’s weight loss portion dinner. Recipe to follow.

my mom’s meatloaf

  • 2lbs ground beef
  • 1 egg
  • 8oz marinara, divided
  • 6oz riced cauliflower, cooked
  • 1 tbsp dried onion
  • 2 tsp Italian seasoning
  • 2 tsp salt
  • 2 tsp garlic powder
  • 1/2 tsp pepper
  • 1/4 cup Parmesan cheese

Preheat oven to 350 degrees. Line a baking sheet with parchment.

Mix (by hand) beef, egg, 4oz marinara and remaining ingredients in a large bowl. Form into 2 loaves on a baking sheet.

Bake for 40 minutes.

Top with remaining 4 ounces of sauce and Parmesan cheese. Bake an additional 5 minutes.

Makes approximately 8 servings.

Then it’s topped with additional marinara and Parmesan cheese and baked for another 5 minutes. The recipe makes approximately 8 servings.
