jicama fries

Mom says “These oven baked “fries” are easy to make and a delicious alternative to French fries. We made it with a spicy dipping sauce inspired by BLE Community Member Linnea (IG:@healthy_looks_good_on_you). The sauce is also great with chicken, burgers or fish.

Start by chopping 1 1/2 lb jicama into “fry size” strips. Make sure you peel the outer rind off of the entire jicama and discard.

Place jicama in a microwave safe bowl with 1/2 cup of water and microwave on high for 10 minutes, stirring once in the middle of cooking.

Once finished steaming in the oven, strain excess water and pat dry. Toss jicama with 2 tbsp olive oil, 1 tsp salt, 1 tsp garlic powder and 1 tsp paprika.

Spread out on a lined baking sheet and cook in a 400 degree oven for 25 minutes. Flip them over and return to oven for 20-30 more minutes or edges are crispy and center is soft.

These count a a vegetable, so cook them up and weigh them out. Eat them with lunch or dinner!! Recipe to follow.

jicama fries

  • 1 jicama, about 1 1/2 pounds
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1 tsp garlic powder
  • 1 tsp paprika

Preheat oven to 400 degrees.

Peel and chop the jicama into fry/wedge shapes about 1/4 inch thick.

Add the chopped jicama to a microwave safe bowl and add about 1/2 cup water.

Cover with a paper towel and microwave on high for 10 minutes, giving a quick stir halfway or you can boil it in water for 10-15 minutes. Be careful removing the bowl from the microwave. It will be hot!

Drain off any excess water and pat jicama dry.

Toss with olive oil and seasonings. Feel free to add any other seasonings of your choice.

Transfer to a parchment lined baking tray and spread evenly.

Bake for 25 minutes. Flip the fries and bake an additional 20-30 minutes until edges are crispy and center is soft.

Serve with Linnea’s Hamburger sauce.

spicy dipping sauce

  • .5 oz mayonnaise
  • .5 oz Primal Kitchen ketchup (it has no sugar)
  • .5 ounces spicy brown mustard
  • .2 ounces dill pickle juice
  • 1/2 t. salt
  • 1/4 t. smoked paprika

Mix all ingredients together.

Dipping sauce would count as your fat if you choose to include!

1 serving = however many oz of veggie you weigh after cooking. Sauce counts as fat.
