This recipe was inspired by Bright Line Community Member Melodie! Thanks for the inspiration!!

Start by browsing 16oz of sausage in a skillet and season with 1/2 tsp onion powder, 1/2 tsp garlic powder, salt and pepper. Cook until brown and then remove from skillet and set aside.

Add 1 tbsp sesame oil and sauté 1/2 of a chopped onion, 2 minced cloves of garlic and 2 tsp of fresh minced ginger. Cook for 4-5 minutes until brown.

Add 1 cup chopped mushrooms (I used oyster mushrooms) and 1 cup chopped sweet peppers to the skillet.

Next add 1/4 cup shredded carrots and 3/4 cup edamame.

Stir in 16 oz of coleslaw mix and cooked until just wilted. Season with 3 tbsp tamari sauce, 1 tbsp rice vinegar and 1 tsp Sriracha. Cook for another 1-2 minutes.

For each bowl weigh out 10 oz vegetables, 4 oz cooked cauliflower rice and 4 oz sausage (reheat for 1 minute in microwave if needed). Garnish with green onions, sesame seeds, and more Sriracha, if desired.

  • Salt and pepper
  • 1 tbsp sesame oil
  • 1/2 onion, chopped
  • 2 cloves garlic, minced
  • 2 tsp fresh ginger, minced
  • 16 oz coleslaw mix
  • 1/4 cup shredded carrots
  • 1 cup chopped mushrooms (I used oyster mushrooms)
  • 1 cup chopped sweet peppers
  • 3/4 cup edamame
  • 3 tbsp tamari sauce
  • 1 tbsp rice vinegar
  • 1 tsp Sriracha
  • 4 tbsp green onions
  • 1 tsp sesame seeds
  • Frozen riced cauliflower

In a large skillet, brown sausage with onion powder, garlic powder, salt and pepper. Remove from skillet. Set aside.

Add 1 tbsp sesame oil to skillet. Sauté onion for 4-5 minutes or until browned. Add chopped garlic and ginger. Brown for 2 minutes.

Add mushrooms, carrots, peppers, edamame, and cole slaw mix to the skillet. Cook until the cabbage begins to wilt.

Add tamari sauce, rice vinegar and Sriracha. Stir and heat for another minute or two.

Cook frozen riced cauliflower. Reheat sausage in microwave for a minute.

1 serving = 14oz veggies and 4oz protein and full fat
