classic chili

Mom says “I’ve been experimenting with chili recipes for quite a while. This is by far my favorite! Loaded with veggies and BLE compliant.”

This is great for batch cooking and freezing as it makes 8 servings.

1 serving = full protein and 5oz of veggies. Add a salad on the side for a complete BLE compliant weight loss dinner.

Add 1 tbsp of olive oil to a Dutch oven and heat for 1 minute over medium/high heat. Sauté 1 medium diced yellow onion and 1 1/2 cups diced red, yellow, or orange sweet peppers for 5 minutes, stirring occasionally.

Next add 1 lb each of ground beef and ground sausage. Cook until brown, about 6-7 minutes. Remove excess fat from the Dutch oven after meat is completely cooked. Add 4 tbsp chili powder, 3 tbsp cumin, 1 1/2 tbsp garlic powder, 2 tsp salt, 3/4 tsp black pepper and 1/4 cup tomato paste and stir until well combined.

Finally, add 3 cups beef broth, 2 (15 oz) cans diced tomatoes, 2 (16 oz) cans black beans, rinsed and drained, 2 (8 oz cans) tomato sauce and 1 can green chilies. Bring to a low boil, then reduce heat to low and cook for 20-25 minutes, stirring occasionally.

Add a 9oz salad or other vegetable and a fat and you have a complete BLE weight loss compliant dinner. Recipe to follow.

classic chili

  • 1 tbsp olive oil
  • 1 medium yellow onion, diced
  • 1 1/2 cups diced red, yellow, or orange sweet peppers
  • 1 lb lean ground beef
  • 1 lb ground sausage
  • 4 tbsp chili powder
  • 3 tbsp cumin
  • 1 1/2 tbsp garlic powder
  • 2 tsp salt
  • 3/4 tsp black pepper
  • 1/4 cup tomato paste
  • 3 cups beef broth
  • 2 (15 oz) cans diced tomatoes
  • 2 (16 oz) cans black beans, rinsed and drained
  • 2 (8 oz cans) tomato sauce
  • 1 can green chilies

Add the olive oil to a large soup pot or Dutch oven and heat over medium-high heat for one minute. Add the onion and peppers. Cook for 5 minutes, stirring occasionally.

Add ground beef and sausage to the pot. Cook for 6-7 minutes, until the beef is browned, stirring occasionally.

Add chili powder, cumin, garlic powder, salt, pepper and tomato paste. Stir until well combined.

Add the broth, diced tomatoes (with juice), drained beans, tomato sauce and green chilies.

Bring to a low boil. Reduce heat to low to gently simmer the chili, uncovered, for 20-25 minutes, stirring occasionally.
