meagan’s chicken salad

We used to make this chicken salad with pasta…and leaving that out is really the only change to make this BLE compliant!!

This is a complete BLE weight loss lunch: 6oz veggie, 6oz fruit, 4oz protein and a full fat. I batched them and made 4, they keep really well in the fridge and the flavor even gets better!!

Peel and dice your jicama. Each portion will need 3oz.

I weighed out each of the ingredients in the container I was going to store it in, that way I didn’t have to dirty a bunch of dishes!

Next slice and chop your celery. I added 3oz on top of the jicama.

Add 6oz of quarters grapes on top of the other ingredients. I use red grapes as they are a little sweeter, and go well with this salad!

Shred 4oz of rotisserie chicken and add to your container.

Dump the contents of the container in a mixing bowl. Add .5oz mayo, 2 tbsp of spicy brown mustard and salt and pepper to taste. Mix this and then put back into your storage container.

Repeat this step until you have mixed up all of your salads!

This is super simple and can be spiced up any way you like. The spicy brown mustard I used has no sugar and plenty of flavor, so salt and pepper was all I needed! Recipe to follow.

  • 3 oz jicama, diced
  • 3 oz celery, diced
  • 6 oz red seedless grapes, quartered
  • 4 oz rotisserie chicken, shredded
  • .5 oz mayonnaise
  • 2 tbsp spicy brown mustard
  • Salt and pepper, to taste

Mix all the ingredients together. Store in the fridge for 3 – 4 days.

Makes 1 serving
