baked lemon butter cod

Mom says “This is my new favorite way to eat cod. It’s lemony, garlicky, super easy to make and elegant enough for a romantic dinner ❤️”

Measure out 4oz of the cooked fish for a weight loss portion of protein for lunch or dinner.

In a large bowl, mix together 2 tbsp of melted butter, 2 cloves minced garlic, 1 tsp garlic powder, 1 tsp onion powder, the zest from one lemon, 2 tbsp freshly squeezed lemon juice and 1/4 tsp red pepper flakes.

Make sure you thoroughly pay dry the filets and then add them to the bowl of marinade. Toss them until thoroughly coated.

Place cod filets in a baking sheet and cover with remaining marinade.

Place lemon slices on top of and around filets and bake in a 400 degree oven for 10 – 15 minutes or until fish is flaky. Garnish with fresh parsley!

  • 2 cod fillets or other white fish, 5 oz each
  • 2 tbsp butter, melted
  • 2 cloves garlic, minced
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Zest from one lemon
  • 2 tbsp freshly squeezed lemon juice
  • 1/4 tsp red pepper flakes
  • 1 tbsp fresh parsley, chopped
  • 1 lemon, cut in slices

Preheat oven to 400 degrees. In a medium size bowl, combine the melted butter, garlic, garlic powder, onion powder, lemon zest, lemon juice, and red pepper flakes.

Pat the fish dry (this will enable the sauce to adhere to the fish).

Add the cod fillets to the bowl and toss to coat in the lemon butter sauce.

Place fillets in a baking dish and pour remaining sauce over the cod.

Place lemon slices on and around the fish.

Bake 10-15 minutes or until fish flakes easily with fork.

Garnish with fresh parsley.
