carrot fries

Mom says “We had several requests for this recipe. I had never made it but so glad I did. Yummy!!”

This counts as vegetable! Have it for lunch or dinner!! Weigh it out and enjoy!

Cut 4 large carrots into thing strips about 4 inches long.

Toss with 1 1/2 tbsp of olive oil, 1 tsp of salt, 1/4 tsp of pepper, 1 tsp garlic, 1/4 tsp paprika or cumin. The sky is the limit with flavor, so put whatever spices you like!

Spread evenly on a lined baking sheet and bake for 30 minutes in a 425 degree oven. Turn once at about 15 minutes.

Pro tip: place your oven rack into the position about 1/3 from the top. This will make for “crispier fries!” Recipe to follow.

  • 4 large carrots, cut into thin strips about 4” long
  • 1 1/2 tbsp olive oil
  • 1 tsp salt
  • 1/4 tsp pepper
  • 1 tsp garlic powder
  • 1/4 tsp paprika or cumin (optional)

Preheat oven to 425 degrees. Line a rimmed baking sheet with parchment paper. Arrange the oven rack about 1/3 of the way from the top of the oven.

Combine the cut carrots with the olive oil, salt, pepper, garlic powder, and any other spices you choose. Mix until the carrots are well coated.

Arrange the carrots on the prepared baking sheet. Don’t overlap!

Bake for about 30 minutes, stirring to flip them over halfway through.
