
Mason jar salads are a great way to food prep lunches OR dinners. These store for up to 3 days in the fridge. These are complete BLE meals depending on the quantity of veggies. 6oz veggies + 6oz fruit would make this a complete lunch. Bulking up the veggies to 14oz will make this a complete BLE dinner!

Start by baking two chicken breast coated with 1 tbsp olive oil and 2 tbsp tamari in a 425 degree oven for 10 minutes. Turn the breasts over and bake for 15 more minutes. Set these aside to cool for at least 10 minutes before assembling the salad.

Chop Napa cabbage, red bell peppers and shred carrots. For lunch portion these veggies would equal 6oz. You can bill up to 14oz for dinner portion or add another veggie on the side for dinner.

Assemble the dressing: 2 tbsp olive oil, 2 tbsp rice vinegar, 1 tsp sesame oil, 2 tsp tamari or soy sauce and 1 minced garlic clove. Divide dressing evenly between 4 mason jars.

Slice the chicken and weigh out portions. 4oz for weight loss, 6oz for enhanced weight loss.

Start by adding in your chicken directly on top of the dressing. Next add lettuce, then carrots, then top with bell peppers.

Invert the jar onto your plate or bowl when ready to serve. Recipe to follow.

Chicken
- 2 large chicken breasts
- 1 tbsp olive oil
- 2 tbsp tamari or soy sauce
Salad dressing
- 2 tbsp olive oil
- 2 tbsp rice vinegar
- 1 tsp sesame oil
- 2 tsp tamari or soy sauce
- 1 garlic clove, minced
Salad
- 6 cups shredded cabbage (I used Napa)
- 2 cups shredded carrots
- 2 cups red bell pepper, thinly sliced
Preheat oven to 425 degrees.
Line a baking dish with foil and place chicken in the dish. Cover the chicken with 1 tbsp olive oil and 2 tbsp tamari sauce.
Bake for 10 minutes. Flip the chicken.
Bake for another 15 minutes or until juices in chicken run clear.
Allow to cool for 10 minutes before slicing.
Shake together vinaigrette ingredients.
Divide the vinaigrette evenly between 4 mason jars. I had approx. 1.5 tbsp per jar.
Distribute the chicken slices evenly among the jars (or male/female serving size)
Top the chicken with cabbage, carrots and bell peppers.
Store sealed jars in refrigerator for up to 3 days.
