slow cooker beef carnitas tacos

Craving tacos?!? Well thanks to some very inventive folks we now have some BLE compliant tortilla options. This recipe uses the cheese tortillas from Trader Joe’s…no reason you could use any other variety though!

Start by making your spice rub. Combine 1 tsp chili powder, 1 tsp cumin, 1/4 tsp onion powder, 1/4 tsp garlic powder, 1/4 tsp cayenne pepper, 1 tsp salt and 1/2 tsp ground black pepper. Rub this mixture all over 2 lbs of bee flank steak.

Place the beef, 1 chopped yellow onion and a couple of seeded and chopped jalapeños in your slow cooker. Cook on low for 8 hours.

Remove beef and shreds with 2 forks. Add back in some liquid in order to keep the meat moist and flavorful.

Microwave your cheese “tortilla” for 1 minute and then shape to your desired shape.

Load up your “tortilla” with 2oz of the beef, 2oz of avocado, 1oz of bell peppers, sliced, 2 tbsp of salsa and a squeeze of lime. This will equal your full protein and fat and 1oz of veggies. Add another 13oz of veggies on the side and you have a complete BLE women’s weight loss portion dinner. Recipe to follow.

  • 2 lbs flank beef steak
  • 1 large yellow onion, chopped
  • 1 or 2 Jalepeño peppers, seeded and chopped
  • 1 tsp chili powder
  • 1 tsp cumin
  • 1/4 tsp onion powder
  • 1/4 tsp garlic powder
  • 1/4 tsp cayenne pepper
  • 1 tsp salt
  • 1/2 tsp ground black pepper
  • Trader Joe’s cheese tortillas
  • Salsa
  • 1 lime
  • 1 avocado
  • 1/2 red or yellow bell pepper

Combine chili powder, cumin, onion and garlic powders, cayenne pepper, salt and black pepper. Mix well.

Rub flank steak with spice mixture.

Place rubbed beef steak in the bottom of slow cooker. Place chopped onion and jalepeño over meat.

Cover and cook on low heat setting for 8 hours.

Remove cooked meat from slow cooker. Shred using a fork.

To serve:

Microwave cheese tortillas for 1 minute and form into desired shape.

Spoon meat onto/into tortilla. Top with salsa, sweet peppers, avocado and a squeeze of lime.

Multiple servings

1 taco = full protein and fat + 1oz veggies
