shepherd’s pie with mashed cauliflower

Here’s another BLE converted recipe! This gets you your full protein and 6oz of veggies! With 8 servings it would be great for batch cooking and freezing as well.

Start by cooking onion, garlic and carrots in 1 tbsp of olive oil. Add a bat leaf. Cook for 6-7 minutes until vegetables are just tender.

Add 2 lbs of ground music and cook until browned. Remove all excess grease from the pan.

Make a slurry with the flax seeds, tomato paste, hot water, Worcestershire sauce, salt and pepper in the side of the pan. Mix this thoroughly and then combine with the beef mixture.

Cook 1 lb of green beans in boiling water for 8 minutes, drain and then add to the beef mixture and incorporate.

Microwave 2 – 16 oz bags of cauliflower rice and place in a bowl with butter, half and half, thyme, rosemary, sage and salt. Use an immersion blender to mash the cauliflower. DON’T over mash as it will turn to liquid.

Put the beef mixture in a well oiled 9 x 13 pan. Top with the cauliflower mixture and bake in a 350 degree oven for 30-40 minutes. Place back under the broiler for 3-4 minute to brown the top of the cauliflower.

This recipe makes 8 servings. 1 serving is full protein and 6oz veggies. Add another 8oz of vegetables and this is a complete BLE women’s weight loss portion dinner. Recipe to follow.

  • 1 lb green beans, cut into 2” pieces
  • 1 tbsp olive oil
  • 1 small white onion, diced
  • 1 clove garlic, minced
  • 3 carrots, peeled and cut into 1/2 inch dice
  • 1 bay leaf
  • 2 lbs ground beef
  • 2 tbsp ground flax seed
  • 3 tbsp tomato paste
  • 2 tbsp hot water
  • 1 1/2 tsp Worcestershire sauce
  • Salt and pepper
  • 2 (16 oz) pkgs. frozen riced cauliflower
  • 2 tbsp butter
  • 1/2 cup half and half
  • 1 tsp each thyme, rosemary, sage and salt

Preheat oven to 350 degrees. Spray a 9 x 13” baking pan with vegetable oil.

Cook green beans in a small amount of water until crisp tender, about 8 minutes. Drain well. Set aside.

In a large skillet, heat the oil over medium-high heat. Stir in onion, garlic, carrots and bay leaf. Cook the vegetables until they begin to soften, 6-7 minutes.

Add the beef and cook, stirring to break up the meat, until no longer pink, about 10 minutes. Pour off any standing liquid.

Push the ingredients to one side of the skillet and add the ground flax seed, tomato paste, hot water, Worcestershire sauce, 1 tsp. salt and 3/4 tsp. pepper. Stir until blended.

Combine with the beef/carrot mixture in the pan. Cook until the mixture is thickened, 3-5 minutes. Remove from heat. Remove and discard bay leaf. Combine green beans with meat mixture.

Spread the meat mixture in prepared baking pan.

Microwave both packages riced cauliflower for 8 minutes. Put cauliflower in a large bowl. Add butter, half and half, herbs, and salt.

Mash mixture with an immersion blender until cauliflower is just mashed. Do not over mash!

Spoon mashed cauliflower over meat mixture.

Bake until heated through and until cauliflower is lightly browned, 30-40 minutes.

Place under broiler for a few minutes to finish browning.

8 servings

1 serving = 4oz protein and 6oz vegetables
