
This recipe is a great one sheet meal. You can finish baking the carrots and bake the fish at the same time!

Start by peeling and slicing 1lb of carrots. Toss them in 1tsp of olive and and season with salt and pepper. Spread out evenly on a sheet pan and bake in a 400 degree oven for 15 minutes.

While the carrots are roasting, make the marinade for the Mahi-mahi. Mix together 1/2 tsp garlic powder, 1/2 tsp chili powder, salt, pepper, juice of 1/2 of a lime, and 1/2 tbsp olive oil. Make a small tray out of aluminum foil as pictured. Place both filets on the tray and coat both sides of the fish with this marinade and set aside.

Remove the carrots from the oven and turn them over. Place the fish on the same pan and return it all to the oven for 10-12 minutes, or until the fish is flaky.

While the fish and carrots finish cooking make the avocado crema. Blend together 1/2 of an avocado, 1/2 tsp coriander, 1/4 tsp each salt and pepper, 1 tsp lime juice and 2 tbsp plain Greek yogurt. Serve the crema on top of the fish.
This recipe makes 2 servings. Each serving is a full protein, full fat, and 6oz of vegetables. Adding an 8oz salad will make this a complete BLE women’s weight loss dinner. Recipe to follow.
mahi-mahi with avocado crema and roasted carrots
roasted carrots
- 1 lb carrots
- Salt and pepper
- 1 tsp olive oil
mahi-mahi marinade
- 1/2 tsp garlic powder
- 1/2 tsp chili powder
- Salt and pepper
- 1/2 lime, juiced
- 1/2 tbsp olive oil
- 2 Mahi-mahi fillets
avocado crema
- 1/2 avocado, diced
- Add 1/2 tsp coriander
- 1/4 tsp each salt and pepper
- 1 tsp lime juice
- 2 tbsp plain Greek yogurt
Preheat oven to 400 degrees.
Toss carrots with olive oil, salt and pepper. Spread sliced carrots on large sheet pan. Bake for 15 min.
Mix garlic powder, chili powder, salt, pepper, juice from 1/2 lime and 1/2 tbsp olive oil.
Using foil, make a small tray to cook the fish. Place fish in foil tray and generously brush spice mixture over fillets.
Remove sheet pan from the oven. Toss carrots. Place foil tray on sheet pan. Put pan back in oven and bake an additional 10-12 minutes until fish flakes easily with a fork and carrots are tender.
While fish is baking, blend together crema ingredients until smooth. Serve on top of fish.
2 servings.
1 serving = full protein, full fat and 6oz vegetables
