Sometimes only having to dirty one skillet makes sense, and this delicious dinner is worth the one skillet!

Use 1 tsp of the oil that the sun-dried tomatoes are packed in and toast the minced garlic, basil, oregano and thyme until just fragrant.

Add in sun-dried tomatoes, rinsed and drained white beans, diced tomatoes and black olives and allow to simmer for 3 minutes. Next add chopped onions, balsamic vinegar, salt and pepper and combine.

Last add mushrooms and chicken. Allow this to heat until the entire dish is warmed. A fourth of this skillet is equal to your protein portion and 8oz of your dinner vegetable. Add in another 6oz of vegetable and you have a complete BLE women’s weight loss dinner. Recipe to follow.

  • 1lb cooked shredded chicken
  • 8oz sliced mushrooms
  • 1/2 cup chopped onion
  • 2 cloves garlic, minced
  • Salt and pepper
  • 1/2 cup sun dried tomatoes, in oil, chopped
  • 1 can white beans, drained and rinsed
  • 1 can diced tomatoes
  • 1/3 cup chopped black olives
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • 1 tbsp balsamic vinegar
  • Sun dried tomato oil

In a large skillet, brown shredded chicken, remove from skillet.

In 1/2 tbsp tomato oil, sauté mushrooms until tender. Remove from skillet.

In 1/2 tbsp tomato oil, sauté onion until transparent. Add garlic, salt and pepper.

Add sun dried tomatoes and sauté for 3 minutes.

Add beans, diced tomatoes, and olives. Sprinkle with herbs.

Drizzle with vinegar.

Add chicken and mushrooms to skillet.

Stir and heat through.
