spicy pork kabobs

These kabobs pack a lot of flavor, and are another great way to “spice up” dinner! Start by cutting 1 lb of boneless pork into 1 inch cubes.

Combine 1 tsp ground cumin, 1/4 tsp ground coriander, 1 tsp paprika, 1/4 tsp crushed red pepper, 1/2 tsp salt, Freshly ground pepper and 2 tbsp olive oil. Pour the spice mixture and the meat into a ziplock bag and place in the refrigerator. Allow to marinate overnight.

When you are ready to cook, build your skewers with alternating meat and vegetables. We recommend using peppers, onions, squash, etc. Put a little oil on your griddle pan and heat to medium-high heat. Grill the skewers for about 5 minutes on each side until tender and juicy.

4oz of the pork, plus 14oz veggies (mixture of the grilled and a salad, or other vegetables) will make a complete BLE women’s weight loss dinner. Recipe to follow.

  • 1 lb boneless pork loin, cut into 1 inch cubes
  • 1 tsp ground cumin
  • 1/4 tsp ground coriander
  • 1 tsp paprika
  • 1/4 tsp crushed red pepper
  • 1/2 tsp salt
  • Freshly ground pepper
  • 2 tbsp olive oil
  • Chopped vegetables (pepper, onion, squash, etc.)

In a small bowl combine all ingredients except pork. Place pork in ziplock bag and pour in marinade. Seal well and refrigerate several hours or overnight.

Remove pork from marinade and thread onto 4 skewers with vegetables.

Grill over medium-high heat, turning once until meat is cooked but still juicy, about 5 minutes.
