
This meal makes a great lunch! With 4oz protein and 6oz of vegetables you only need to add your fruit and you have a complete BLE women’s weight loss portion lunch.

Remove 4 bunches of spiraled zucchini noodles from the bag.

Defrost the zucchini with 2 tbsp of water until just thawed in a skillet. Remove from the skillet and drain. Put 1 tbsp of olive oil back in the pan and add back in drained zucchini noodles.

Season with 2 minced garlic cloves, 1/4 – 1/2 tsp red pepper flakes, salt and pepper. Sauté until warmed through.

Transfer noodles to a plate and top with 4oz drained tuna and 4oz halved cherry tomatoes. Tomatoes can be cooked with noodles if preferred. Recipe to follow.

- 4 “bunches” frozen zucchini spirals
- Salt and pepper
- 1 tbsp olive oil
- 2 cloves garlic, minced
- 1/4-1/2 tsp red pepper flakes
- 4oz halved cherry tomatoes
- 4oz tuna, drained
Cook veggie spirals in a large skillet with 2 tbsp water until it just thaws.
Drain zucchini.
Heat olive oil in skillet. Sauté veggie spirals with garlic and red pepper flakes.
Transfer to plate and top with cherry tomatoes and tuna.
The tomates can also be cooked with the garlic and red pepper flakes if preferred.
