mango chicken lettuce wraps

This makes a wonderful BLE women’s weight loss portion lunch. You will need to add 3oz of fruit on the side to complete it!

Heat 1 tbsp of olive oil over medium heat. Add 10oz chicken cut into 1 inch pieces.

Season chicken with 1/4 tsp each of turmeric, garlic powder and cayenne pepper. Salt and pepper can also be added to taste. Cook the chicken for 4-5 minutes.

Add in 2oz red onion, 6oz ripe mango, but into 1/2 inch pieces, and 2 tbsp lime juice. Cook for an additional 3-4 minutes.

Slice 3oz each carrots and zucchini into sticks. Use 3oz Bibb lettuce as the wrap. Using 2 lettuce leaves for each wrap, top with carrots, zucchini and the chicken mixture. This makes 2 servings of 3 wraps each. Recipe to follow.

  • 1 tbsp olive oil
  • 10 oz chicken breast, cut in 1 inch pieces
  • 1/4 tsp turmeric
  • 1/4 tsp garlic powder
  • 1/4 tsp cayenne
  • 6oz ripe mango, cut into 1/2 inch chunks
  • 2 tbsp lime juice
  • 2 oz red onion, thinly sliced
  • Salt and pepper
  • 3oz Bibb lettuce – 2 leaves per wrap
  • 3oz carrot, thinly sliced
  • 3oz zucchini, cut in 2 inch lengths and thinly sliced

In a skillet, heat oil over medium heat. Add chicken and spices. Cook for 4-5 minutes.

Add mango, onion and lime juice and stir. Cook for an additional 3-4 minutes.

To assemble wraps, top lettuce with carrots and zucchini and top with chicken and mango mixture.

2 servings (3 wraps each)
