
This is a great way to use up any leftover rice you may have. After a take out dinner with my nieces this weekend, we had leftover Spanish rice from their order. I made this for both my mom and I the next morning! You could also make a batch of rice at the beginning of the week and divide out 4oz portions for each day. A nice switch up to savory, if you are used to a sweeter breakfast.
Start by heating a skillet to medium-high heat. Add in 4oz of cooked rice. Toast this for a couple of minutes, or until rice starts to get brown and crispy. I then added in 2 eggs that I whisked in a bowl. Cook to your desired doneness, add whatever spices you like! With 6oz of fruit this makes a complete BLE women’s weight loss portion breakfast. leftover rice breakfast
- 4oz cooked rice
- 2 eggs
- Any spices you want
- Salt and pepper
- 6oz fruit of choice
Heat skillet to medium-high, toast rice until brown. Whisk 2 eggs in a bowl and pour over toasted rice in pan. Add in spices, salt and pepper. Cook until eggs are scrambled. This will be crumbly and should break up easily in the pan. Add 6oz if any fruit.
