
A bowl of this soup makes a great Bright Line Eating lunch portion with 6oz of fruit and 4oz of additional veggies. You could also have this for dinner with additional veggies.

Shred 1 lb (16oz) of cooked chicken. Mom adds more because Dad gets more protein on his BLE plan. We recommended Costco’s rotisserie chicken. Good flavor, easy shredding, and so reasonably priced!

Chop 15oz of vegetables: approximately 3 large carrots, 2 celery stalks and 1/4 of a yellow onion. Melt 2 tbsp of butter in a large Dutch oven and sauté vegetables over medium/low heat for 7-8 minutes. Add in 3 cloves of garlic minced and sauté for 30 seconds. Now add your spices: 2 bay leaves, 1/4 tsp dried thyme, salt and pepper to taste.

Add 8 cups of chicken stock and shredded chicken, bring to a boil. Turn down heat and allow soup to simmer for 30 minutes on low.

Serve with 6oz of fruit and 4oz of raw vegetables to make a complete BLE Women’s weight loss portion lunch. Recipe to follow.

- 2 tbsp butter or olive oil
- 3 large carrots
- 2 stalk celery
- 1/4 yellow onion
- 3 garlic cloves, minced
- 2 bay leaves
- 1/4 tsp dried thyme
- Salt and pepper to taste
- 8 cups chicken broth
- 1lb shredded rotisserie chicken
Melt butter in a Dutch oven over medium/low heat. Add carrots, celery and onion and cook for 7-8 minutes. Add garlic and cook for another 30 seconds.
Add bay leaves, thyme, salt, pepper, broth and chicken. Bring to a boil. Turn down heat and simmer for 30 minutes. Serve.
Makes 4 servings.
